Chinese Food in San Diego

You know, I am a "white" American person of indeterminate lineage but something like Irish, Dutch, Swedish, Austrian, Native American, and something else, and my grandmother used to whip up some mean Chung King fare when I was a kid, which I ate with relish, that can of chow mein, some crispy noodles on top, some soy sauce, everything.
So I'm not too adventurous when it comes to Chinese food, not that you have to be or should be in order to find and enjoy good food, but some people just go nuts for the chewy chicken cheek pudding and all that other stuff. Maybe one day, maybe.
By Chinese I'm including Hong Kong and Taiwan too, should I run across restaurants focusing on those areas, though now Hong Kong is part of China, yeah yeah.
Provinces of China I'm not too aware of differences, Szechuan means hot, apparently, and with peanuts, but that's all I know, so that's where I'm coming from here.
I've had really bad Chinese food in San Diego, and it's because I made the wife and I go to PF Chang's. Even I, with my pasty background, could not handle the bland nothingness that emitted from the kitchen. Alas.
I like China Max, but in reality I've not had anything that has really wowed me there. In SF it's all about House of Nanking, among others, but, well, yes, we are now in San Diego.
I will try, folks, I will try, but there's so many bad places out there.
